Food Friday: Chocolate Covered Sunbutter Stuffed Dates
Yes, you read that correctly!
My good friend and recently minted Ayurvedic Health Counselor Anna Sullivan planted the seed for this in my head - and I had to water it and let it take life.
This is a crowd-pleasing treat that will make you the favorited person at any party. Get ready for some realness!
4oz bittersweet chocolate (I use theo 70%)
1/2 cup sunflower seed butter
Optional: 1/4 cup unsweetened, shredded coconut
Bamboo skewers, parchment paper, baking sheet
Melt chocolate in double-boiler.
While chocolate is melting, split dates lengthwise down one side and remove pits.
Spoon sunflower seed butter into "date boats".
Skewer stuffed dates crosswise and dip into melted chocolate, tapping off excess (jokes! There's no such thing as excess chocolate). Place onto parchment lined baking sheet.
Optional: sprinkle with shredded coconut, refrigerate until chocolate has hardened, and serve! Store refrigerated.
