Food Friday: Root Veggies for Vata Vibes

We all have those days. Those vata vibe days. You may know what I'm talking about...

You're feeling scattered. You're anxious. You're nervous, maybe overwhelmed by everything you have to deal with in work and life. Physically, you're constipated ("when was the last time I went??" you ask yourself), gassy, and bloated. These, my friend, are vata vibes.

The easiest way to remedy the blockage? Eat root veggies! Thoroughly oiled, cooked, and spiced root veggies are extremely grounding and nourishing during this time of dire need. Root veggies, you see, grow in the ground. If you garden, think about how difficult it is to pull a hearty tuber out of the earth. They are; therefore, the most grounding and nourishing veggies out there. We are what we eat - and so if we're feeling ungrounded and scattered, then roast up a delicious batch of carrots and/or beets and get yourself grounded!

Easy Roasted Carrot and Beet Recipe

  1. Preheat oven to 375°F. Melt 2 tbsp ghee in a large sheet tray in oven.

  2. Chop three medium carrots and one large beet into roughly same-size pieces. You want about the same amount of both.

  3. Toss chopped roots in melted ghee with 1 tbsp fennel seeds (or 2 tsp powder), 1 tsp rosemary, 1/4 tsp salt, and black pepper to taste.

  4. Bake for 10 minutes. Remove from oven, stir to flip roots, and bake for another 10-15 minutes or until thoroughly softened.

  5. Enjoy!
